In the Twelve Days of Christmas, which type of hens were most likely the "Three French Hens"?

  • French Bresse:Yes that was the French Bresse, not the French Press. One is for coffee and the other is not. Do not confuse them or you coffee will consist of feathers! The standard American french hen is the Faverolles because of its docile behavior which makes it easy to keep as a pet and because it withstands cage breeding which makes it easy to keep for meat or eggs. However, Faverolles were not developed until the 1860's in France so it probably was not the French Hen in three french hens. The French Bresse has been around for over 500 years and is considered one of the most popular chicken breeds of all time. There are over 1million Bresse hens today! Why 3 french hens and one partridge? Hens are easy to breed so a restaurant or butcher can always have them on hand whereas a partridge is a bit tricker since it needed to be hunted. Tres cool, oui?
